2 min read

This method gives tender ribs with a smoky, caramelized BBQ finish, even if you don’t have a smoker.

Ingredients

For the ribs

  • 2 racks pork ribs (baby back or St. Louis style)
  • 2 tbsp yellow mustard (binder)
  • 2 tbsp olive oil (optional)

Dry rub

  • 1/4 cup brown sugar
  • 2 tbsp paprika
  • 1 tbsp salt
  • 1 tbsp black pepper
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp chili powder
  • 1 tsp cayenne (optional)

BBQ sauce

  • 1 to 1½ cups BBQ sauce
    Store-bought works, or use homemade.

Step 1: Prep the Ribs

  1. Remove the thin membrane from the back of the ribs.
  2. Pat dry with paper towels.
  3. Rub lightly with mustard or oil.
  4. Coat generously with the dry rub on both sides.

Let the ribs sit for 30 minutes, or refrigerate overnight for deeper flavor.

Step 2: Slow Cook

Oven Method

  1. Preheat oven to 300°F (150°C).
  2. Wrap ribs tightly in foil.
  3. Place the meat on a baking tray, meat-side up.
  4. Bake:
    • Baby back ribs: about 2½ hours
    • St. Louis ribs: about 3 hours

The ribs should be tender but not falling apart.

Step 3: BBQ Finish

  1. Heat grill to medium-high.
  2. Remove ribs from foil.
  3. Brush with BBQ sauce.
  4. Grill 3–5 minutes per side until caramelized and slightly charred.
  5. Add another layer of sauce before serving.

No grill? Broil in the oven for 3–5 minutes instead.
