Vegetable Chow Mein: an original Chinese recipe

Ingredients For Vegetable Chow Mein

The ingredients are measured for two diners who consume this recipe as a single dish. If you are more, you will only have to add more quantity.

  • 1/2 package of rice noodles
  • 1 carrot
  • 1/2 red bell pepper
  • 1/2 green pepper
  • 1/2 cup broccoli
  • 1/1 cup of mushrooms
  • 1 clove garlic
  • 1 spring onion
  • ginger
  • extra virgin olive oil

For the vegetable Chow Mein sauce:

  • Am
  • sesame oil
  • rice vinegar
  • Roasted sesame seeds

Elaboration

  • Put a pot of water on the fire. When it starts to boil we put the noodles to cook. The cooking time of the rice noodles will depend a lot on the brand used. Read the manufacturer’s instructions carefully before putting the noodles into the water.
  • When the noodles are al dente, remove them from the pot and drain them. Cut the cooking with cold water.
  • Drain the rice noodles again and add a splash of oil so they don’t stick. Reserve them.
  • In a bowl, mix the soy sauce, sesame oil, and rice vinegar. The amount will depend on whether you prefer a stronger or milder flavor. To taste, soy sauce should always predominate.
  • We put a pot back on the fire with plenty of water. When it boils, put the broccoli to boil for three minutes. We take it out and reserve it.
  • Cut the spring onion and garlic into very thin slices. We do the same with the mushrooms, carrots, and peppers. We reserve it.
  • Heat the pan or wok, add a little olive oil and add the spring onion and garlic. Then the carrot and peppers. We cook until they are tender, which will be the moment to introduce the mushrooms, the broccoli, and the sauce that we had reserved.
  • Finally, add the noodles and mix everything in the wok or pan. Add salt and pepper to taste.
  • For decoration, you can add some sesame seeds and a spring onion cut into very thin slices.
